[make: Applesauce Mini Muffins]

WOW!!!  Do I feel GOOD!

The sun's out, the wind is warm, I was able to get up with my kids today, make Tias' lunch, send him off with hugs and kisses ... I missed that all last week.  Strange how the boring things, the tedious things, are the things you miss the most when you can't do them!

And now - the smell of applesauce muffins is flooding our home.  Siah and I made mini-muffins ... perfect for lunch boxes and car rides.  Super easy to make, and work perfectly zip-locked in the freezer.

Here's the recipe.  It makes 24-30 mini muffins.

Applesauce Muffins

2 cups all-purpose flour ( I used spelt flour)
1-1/2 teaspoons ground cinnamon
1-1/2 teaspoons ground allspice
1 teaspoon baking soda
1/2 cup butter or margarine, softened
1 cup sugar ( I used organic Cane sugar )
1 eggs
1 cup applesauce
1 tablespoon vanilla extract

In a bowl, combine flour, cinnamon, allspice and baking soda; set aside. In a mixing bowl, cream butter and sugar. Beat in eggs, applesauce and vanilla; stir into dry ingredients just until moistened. Fill greased or paper-lined muffin cups three-fourths full.

Bake at 350 degrees F for 20-25 minutes or until muffins test done. Cool in pan 10 minutes; remove to a wire rack.

On another note, this week is PURGE week.  That's right ... some call it Spring Cleaning, I call it PURGING.  It started on Saturday - with the front room.  Got rid of knick-knacks, photo frames, sorted through digiscrap albums, got rid of clutter ....  I looks SO good.  And FEELS so good! 

Today?  The kitchen ... specifically, the drawers ... time to throw out the broken, unusable junk.  Oh, this is gonna be awesome :-) ...

I know.  I'm a wacko.

I'm trying these muffins tonight...they sound yummy and i love anything mini...means i can eat more of them :)

Tania...they were a hit by everyone who ate them! That recipe is a keeper for sure...and i used the spelt flour too-soooo good! thanks for sharing :) Keep 'em coming!

I just made them for the second time, this time using blueberry/pomegranite/applesauce. My daughter loves them even more now that they are purple!
